Introduction

Indulge in the rich, creamy delight of homemade ice cream with this decadent recipe. Perfect for special occasions or a sweet treat any time of the year.

Prepare the Custard

In a medium saucepan, combine the heavy cream, whole milk, and half of the sugar. Heat over medium heat until the mixture is warm and begins to steam, but do not let it boil.

Whisk the Egg Yolks

In a separate bowl, whisk the egg yolks with the remaining sugar until the mixture becomes pale and thick. This step ensures a creamy texture in your ice cream.

Temper the Egg Yolks

Slowly add a ladleful of the warm cream mixture to the egg yolks, whisking constantly to temper them. This prevents the eggs from curdling.

Cook the Custard

Pour the tempered egg yolks back into the saucepan with the rest of the cream mixture. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.

Add Flavorings

Remove the saucepan from the heat. Stir in the vanilla extract and a pinch of salt. For chocolate ice cream, whisk in the cocoa powder until fully incorporated.

Chill the Mixture

Pour the custard through a fine-mesh sieve into a clean bowl to remove any lumps. Cover and refrigerate for at least 4 hours or overnight, until the mixture is thoroughly chilled.

Churn the Ice Cream

Pour the chilled custard into an ice cream maker and churn according to the manufacturer's instructions. This process usually takes about 20-25 minutes.
